Australian cane blackstrap molasses is used mainly in the fermentation (ethyl alcohol, yeast, lysine and monosodium glutamate) and stockfeed industries and has traditionally been sold through major trading houses - Westway/ SvG (ED&F Man), United Molasses (Tate & Lyle), Peter Cremer & Alfred Toepfer. Molasses is an agricultural by-product of sugar milling and varies in quality according to seasonal regional conditions. It is sold on the basis that it shall be of sound and merchantable quality, free from adulteration or contamination but with no warranty of suitability for human consumption. An indication of the range of quality specifications achieved for Australian Blackstrap cane molasses is as follows:-
Because molasses is an agricultural byproduct of sugar milling, it varies in quality according to seasonal and regional conditions. Mills pay strict attention to maximising sugar recovery from molasses. The chemical and physical characteristics of sucrose mean that some sucrose is left in molasses. About 6 to 8% of the sucrose which arrives in cane is left behind in molasses. Apart from sucrose, molasses also contains other sugars (eg glucose and fructose) and salts. The combined "sugars" content in Australian molasses is about 50% of the weight of molasses. All the sugars combine to make molasses an economic source of energy for either fermentation or as a stockfeed supplement.
